Honey Ice Cream
This is a rich ice cream which is delicious with pies and crumbles. If you have lavender in flower add a few sprigs to the milk when you bring it to the boil.

1 pint full cream milk.
6 oz Honey House Honey
4 egg yolks
½ pint double cream
6 sprigs of lavender (optional).
Put the milk in the pan with the lavender bring to the boil, then remove from the heat, cover and allow to cool for 30 minutes.
Warm the honey in its jar in a pan of hot water to make it runny. Put the warm honey and the egg yolks in a bowl and whisk.
Strain the milk into a pan and reheat to boiling. Pour it over the honey and yolk egg mixture. Return it to the pan and heat gently until it thickens and coats the back of a spoon. Leave it to cool and then stir in the double cream. Freeze in a freeze or ice cream maker, beating the mixture to prevent ice crystals forming. Transfer to fridge 20 minutes before serving.
